The joys of baking.....
I just spent the last three days at a leadership summit with the leadership team at our church. This is my third year taking part in this. I love it. Halfway through I'm always thinking "crap why did I put myself through this again", but I'm always thankful I did. It's hard to get pushed by God in that extreme way. However it's good for the soul and good for His kingdom if I listen and follow through on the promptings, which I always do after the summit because they're so intense that I can't imagine not. Anyways, it was great and well worth the money.....ah Bill Hybels!
One thing I did learn this weekend is that I have a passion for baking (I kind of knew this but thought it was stupid). I love it! It refreshes me and brings people together. So I could not wait this morning to get up and bake muffins. I love it when I have free time on the weekends because I get to bake muffins for my breakfast for the week. I hate eating store bought things now and never use mixes. So yes I'm spoiled but I'm able to adapt and make wholesome, low fat recipes my way (if any of you ever have any baking questions fire away).
Anyways, found a great muffin recipe that I made this morning....hope you take the time to enjoy these hearty, not too sweet and the perfect amount of banana flavour with the extra kick of chocolate beauties!
Whole Wheat Banana Muffins
Ingredients:
3/4 cup whole wheat flour
3/4 cup white unbleached flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup oatmeal
1 egg
3/4 cup milk
1/3 cup mashed banana (about one banana)
1/4 cup oil (I always use canola when baking)
1/4 cup honey
1/2 cup of fair trade chocolate chips
Directions: Combine the flours, baking powder, salt, and oatmeal. Stir. In another bowl, beat egg, stir in milk, banana, oil, and honey. Pour into flour mixture and stir until evenly moist. Stir in chocolate chips. Spoon into greased muffin cups and bake for 15 minutes at 400F.
One of our friends invited us over for supper tonight so I'm off to make a peanut butter pie for dessert....YAY! :)

LOL... I have to say, I thoroughly enjoy your writings... they always make me smile. And you can bet I'm going to try the recipe. My friend's wife just baked some (very good btw) and I was fortunate to benefit from being at the right place at the right time. Than I was thinking I needed to find a good recipe; so I think I'll start here. Thanks and I'm glad the Lord is active and working in your life! If you can guess who this is... well you won't win anything; I'll just say good for you!
the thing that made me not want to go to the conference was the name "leadership". ahhhhhhhhhhh!!!
Alright Mr. anonymous (I'm assuming you're a boy...do I atleast have that right???). Jason and I have no idea who you are. I'm very confused and I'm looking like an idiot when I flat out ask someone.. hey did you leave a comment on my blog? Hmmmm so do I get more hints or what?
-hey Rachel....ya if you're not interested in leadership then the conference wouldn't be too interesting. I struggled with the whole leader thing for a while.. however it's so part of who I am that there's no point in ignoring it anymore :) thanks for the comment!
